Egg Fried Rice

Ingredients:

  1. Rice: 1 and a half cup 

  2. Eggs: 2

  3. Salt: 1 teaspoon 

  4. Oil: half cup 

  5. White pepper: 1 teaspoon 

  6. Chinese salt: 1 teaspoon 

  7. Soy sauce: 2 tbsp 

  8. Chicken (Julian cut): half breast 

  9. Carrot (Julian cut): 1/4 Cup 

  10. Green onions: 2

  11. Cabbage/Capsicum/peas optional

Method:

Boil rice with 1 and 1/2 tablespoon Salt. Add oil in a pot and fry beaten eggs. Add carrot, capsicum, cabbage, salt, white pepper, Chinese  salt in fried eggs and fry for 2 minutes. Add soy sauce and fry for  1 minute. Add boiled rice and spring onion. Cover the lid and cook rice  further on low flame for 10 minutes. Chinese rice are ready, serve hot.

Chicken with Almond

Ingredients:

  • Boneless chicken: 1 cup

  • Capsicum (cubed): 1

  • Cabbage (cubed): Half cup

  • Onion (cubed): 1

  • Almonds (peeled): Half cup

  • Oil as required

For Marination:

  • Egg: 1

  • Soy sauce: 2 tbsp

  • Salt: 1 teaspoon

  • Sugar: Half teaspoon

  • Chinese salt: 1 teaspoon

  • Black pepper: 1 teaspoon

  • Corn flour: 2 tablespoon

For Stock:

  • Chicken stock / water: 4 cups

  • Chicken powder: 1/2 teaspoon

  • Salt: 1 teaspoon

  • Black pepper: Half teaspoon

  • Corn flour: 4 tbsp dissolved in 1/2 cup of water

Method:

Marinate chicken with egg, soy sauce, salt, sugar, Chinese salt, black pepper, corn flour and keep aside for 20 minutes. Heat oil in a pan and fry chicken until golden. Fry the almonds until Golden, remove in a plate. Sauté the vegetables just to give them a shine and remove from heat.

Add stock or water to a pan, add chicken powder, salt, pepper and mix until it boils. Add dissolved corn flour with constant stirring and mix until thick. Add vegetables, fried chicken, Almonds (Save a few for garnishing). Cook for 30 seconds, dish out, garnish with the rest of the almonds and serve hot.

Potato Pakory

Ingredients:

  • Gramflour (Besan): 1& 1/3 cup

  • Grinded Coriander (Dry dheniya): 1tablespoon

  • Baking powder: 1/2 tablespoon

  • Green chilli (Chopped): 2

  • Cumin seeds(Zeera): 1/2 tablespoon

  • Salt: 1 teaspoon

  • Red Chilli powder: 1/2 tablespoon

  • Small onion: 1chopped

  • Potato(cubed): 1

  • Brinjals (optional)

 

Method:

Mix the dry ingredients. Add water as needed to make a fine batter. Add potato pieces in batter. Use a spoon to pour pakora batter in hot oil. Fry until light brown. Serve hot with ketchup and green yogurt chutni.

Donuts

Ingredients:

  • White flour: 2 cups

  • Egg: 1

  • Sugar: 2-3 tablespoons

  • Milk powder: 1/4 cup

  • Yeast: half tablespoon

  • Salt: According to taste/pinch

  • Butter: 50 gram

Method:

Mix egg, sugar, milk powder, yeast, salt and butter in white flour. Add water as needed to knead a soft dough. Put the dough in an arir tight container and keep it in a warm place for 30-45 minutes. Sprinkle a little amount of flour and knead again to make dough softer.

Roll the dough using rolling pin into a thick bread. Use circular shaped cookie cutters to make the shape of donut. Heat oil in a pan. Fry doughnuts until light brown. Garnish with chocolate syrup, chocolate ganache, white chocolate, sprinkles, cream etc.
